Happiness Delight: Beans on Toast

This is my very own recipe! I love making it in bulk and having something I can just throw in the microwave for a couple days. If you like bean recipes have a go, it’s super simple and quick.

Ingredients: Serves 1-2

  • 1 can black beans
  • About 2 large cloves of garlic
  • 1/4-1/2 an onion
  • cooking oil (preferably olive oil or canola)
  • about 1/2 a tomato
  • fresh cilantro
  • 100% whole wheat bread
  • optional: grated cheese

Directions

  1. Dice the garlic, onion, tomato and cilantro
  2. Oil pan (on low medium heat)
  3. Stir in onion and garlic for about 2 minutes
  4. Add in beans and stir a couple more minutes
  5. Simmer on low for about 5 minutes
  6. Stir in tomato and fresh cilantro for about 2 minutes
  7. Spoon on whole wheat toast and serve with a side of veggies
  8. Optional: sprinkle cheese on top
