Eating healthy is hard. Not only does it get expensive, but it also can be time-consuming if it isn’t done efficiently. As a college student almost always crunched for time and eating on a budget, I have learned a thing or two about eating healthy in an efficient way!
Here are some easy meals you can throw together from the bulk ingredients in your fridge!
Bulk ingredients (prepared/gathered before the week begins):
- Beans (black, pinto, or kidney)
- Brown Rice
- Frozen veggies (a variety of stir-fry combos, peppers and onions, and your favorite other veggies)
- Whole wheat pasta
- A raw green (spinach, spring mix, etc)
- Cheese, sour cream, avocado, salsa
- Firm tofu
Meal 1: Veggie Pasta
Prepare your whole wheat pasta, and while cooking, throw some olive oil into a pan along with garlic and frozen stirfry vegetables. Add some rosemary to season. Throw the vegetable/olive oil mixture onto your prepared pasta along with parmasan cheese. Soooo gooood.
Meal 2: Burrito or burrito bowl
Combine your beans and rice along with avocado, sour cream, salsa, and optional veggies. Yum!
Meal 3: Veggie stir-fry
Add veggies and tofu into a stirfry, Add seasoning, such as rosemary, cilantro, teriyaki sauce, etc. Serve over your pre-made brown rice.
Meal 4: Potatoes and veggie/tofu side
Preheat oven to 400. Wash/cut potatoes into cubes. Sprinkle olive oil, rosemary and garlic onto potatoes. Bake for about 60 minutes, flipping once. Add a veggie/tofu side with your frozen vegetables. Add some seasoning to spice the vegetables up.
Note: Add a side of raw salad, any vegetables, potatoes or tofu for an extra element to any of the meals above!
