I must confess that I have no patience when it comes to cooking.
When it comes to healthy eating habits, that is my biggest challenge: making healthy, whole foods meals with the least effort possible. I love eating healthy, I just hate cooking.
The trick I’ve found, is to rely on healthy filling snacks such as nuts or fruit in between meals so that I don’t resort to cooking 50 meals per day when the mid-afternoon hunger comes a-rolling, and picking recipes that are entirely minimalistic: easy, simple, and fast. The following are 4 of my favorite staple meals:
Big Ass Salad
For the big ass salad, literally all you do is throw together some leafy greens, a source of protein (nuts/hard boiled eggs/meat depending on your diet), any vegetables you have on hand, and some fresh lemon, olive oil, and cayenne pepper.
Chopping up the greens and veggies takes under 10 minutes, and throwing the rest together takes under 5.
Stir Fry
For the stir fry, you should rely on rice or quinoa that you have prepped over the weekend, and then quickly sauté some veggies over the stove.
Prep time total: under 20 minutes.
Mediterranean Bean Salad
I love this recipe here. For the bean salad, you literally throw some beans (either canned or dried that have been prepped), olive oil, lemon juice, onions, parsley, and tomatoes into a boil and mix. It’s that easy.
The veggie slicing takes under 10 minutes. Wonderful.
Avocado Tomato Samich
For the avocado sandwich, you use hearty bread (my favorite is ezekiel), avocado, tomato, and any other additional toppings of your choice. And bam. Ready in less than 10 minutes.
